I know, I know…it’s Friday, not Sunday!  But I figured everyone like pancakes, no matter what day of the week it is…am I right?   If you follow me on instagram, you already know about my love for pancakes.  Boyfriend and I are big fans of #PancakeSunday and we try to celebrate every week, if possible.  If we can’t squeeze it in at breakfast on Sunday, pancakes are still likely to find their way into dinner.

But even though I’m working out a lot right now, I can’t exactly justify pancakes for breakfast all the time.  I mean, we all know flour and sugar isn’t the greatest combo for health…right?  So I make sure to apply my nutrition expertise and have fun creating some healthier recipes.  We ditch the Bisquik and use some out-of-the-box ingredients to come up with our creative but tasty pancakes.


Pancake fun

One of my favorite pancake recipes is a super easy three-ingredient pancake.  Paleo-lovers are big fans of this one, because it really does taste good, it’s SO quick to make and it’s really nutritious.  And did I mention it only has 3 ingredients?  Get this:  1 egg, 2Tbsp nut butter, 1 mashed banana.  That’s it!  That will make about 2 regular sized cakes and has 15 grams of protein, plus healthy fats and fiber!  Boom.

3 Ingredient Pancake: Gluten-free, Paleo, Lactose Free

Some of my other favorite ingredients to play around with are:

  • Almond flour
  • Cashew meal
  • Oats
  • Quinoa
  • Banana
  • Pumpkin
  • Apples/applesauce
  • Coconut milk/flour/sugar <—for boyfriend’s pancakes, not mine! 😉

Banana is the key to making a sweet pancake without lots of added sugar, and the riper (is that a word?), the better!  I also always add things like vanilla, cinnamon and nutmeg that add flavor without adding anything else.

Our current favorite pancake is this almond flour and quinoa combo:


I’m not big on measuring when I’m whipping them up, but I’d guess it’s something like this:

1 cup almond flour

1 cup cooked quinoa

1 medium ripe banana

1 egg

1 teaspoon vanilla

splash of whole milk


So if you’re looking for a yummy breakfast (or dinner!) this weekend, bust out the griddle and get creative with some healthy pancake ingredients.
